Avocado Three Ways

Summer is right around the corner and that means my wedding isn't far away either! AHHH! 170 days to go...but who's counting, right?! Needless to say, I am motivated to put some healthy goals in place. Without a plan and guidelines, I never stay on track!

Only working out does not do the trick for me. It's important to nourish my body from the inside, as well. That means I have to keep my eating habits easy and versatile so that I stick with them. 
Since I absolutely LOVE avocados, I wanted to share these 3 variations with you. Avocados contain a wide variety in nutrients, including 20 different vitamins and minerals. Contrary to the rather "old school" belief that they are high in fat and thus, a bad option for one's diet, avocados contain healthy fat and are low in carbs (source:Authority Nutrition).

Following are three simple recipes for breakfast, lunch, and dessert!

Baked Avocado with Egg, Avocado Toast, and Chocolate Avocado Truffles

How good do these look!? Just a little tip: depending on the size of the avocado and the egg, you may want to scoop out some avocado before you crack the egg into it, so that the egg doesn't spill over the sides.


Full disclosure: rolling the truffles can get pretty messy! But isn't that the fun part about cooking?!


Avocado Three Ways

Ingredients:

2 avocados
1 egg
1 slice of whole wheat/grain bread
pickled onion* and herbs of choice (garnish)
salt & pepper to taste
6 oz dark chocolate
1/4 teaspoon vanilla extract
pinch of salt
2 tablespoons unsweetened cocoa powder

Instructions:

1. Baked Avocado with Egg - Preheat oven to 425 degrees. Take half of an avocado and crack one egg into it. Season with salt and pepper and bake in the oven for about 20 minutes. Garnish with fresh herbs.
2. Avocado Toast - Toast preferred slice of bread. Cut up half of an avocado and place on toasted bread. Garnish with pickled onions and season with some pepper. 
3. Avocado Truffles - Combine chocolate, salt, and vanilla extract and melt over a double boiler until smooth. Mash up one small avocado until no lumps are visible. Add melted chocolate mixture and mix well. Place in fridge for about an hour until hardened. Scoop out 1 tablespoon full of the mixture, roll into one inch balls, and roll in cocoa powder until covered. Store in fridge. 

*Pickled onion - cut up red onion into thin slices and place into a container with a half cup of white wine vinegar, 1/4 cup sugar, and 1/4 cup salt...let sit for a few hours or over night.
