Skinny Cinco de Mayo - 4 Healthy Substitutions for the classic ingredients

Just in time for Cinco de Mayo: some tips on how to enjoy the celebration in a more health conscious way! Don't worry...you can still have tacos and margaritas:) 
I know you can't substitute everything in every meal and still make it taste as yummy as the original version, BUT if you replace processed ingredients with fresh ones, you can add nutritional value to your meal.



1. First Up: Skip the cheese and add a few slices of ripe avocado. The creaminess of the fruit - yes, "fruit" not "vegetable", and its' high content of vitamins, make this a healthy substitution for cheese.

2. I might be partial here because I LOVE plain Greek yogurt, but the yogurt's tangy taste and creamy consistency really make for a great sour cream substitution. Greek yogurt is high in protein and even its' full fat version has less calories than low fat sour cream (source: Livestrong).


3. Whenever you can make something fresh versus buying it ready-made, I would recommend doing so. I have been making this salsa for years now and would never go back to the store-bought version. All you need: chopped tomato, red onion, and cilantro - add some olive oil, fresh lime juice, salt, and pepper and TADA - Homemade Salsa!

4. Saving the best for last: Fresh Margarita! Skip the store-bought margarita mix and make your own, delicious, adult beverage! Super easy recipe:

Ingredients:
2 ounces (1/4 cup) silver tequila - or as much as your heart desires & your liver can handle!
1/1/2 limes
1/2 of an orange 
1 teaspoon light agave nectar
1 lime wedge for garnish
Coarsely ground sea salt for the rim

Directions:
1. Add the tequila, agave, and the juice of the limes and orange in a shaker over ice.
2. Rub the rim of a glass with the garnish lime wedge.
3. Add the salt on a plate and twist the rim of the glass on top of the it to create a salt ring.
4. Shake all the ingredients in your shaker and pour into the salt rimmed glass!
