Clean Food Friday - Breakfast Bowl

Full disclosure: I do not eat a strict Vegan or even Vegetarian diet, however, I try my best to make conscious food decisions and to also have fun with making my own meals, rather than buying processed food. What really changed the way I eat was a post from Cassey Ho, social media fitness entrepreneur and creator of the YouTube channel "Blogilates". She presents a free 28 Day Reset Challenge which is a training program that teaches you how to eat real food and helps clean out your body from built up toxins. What attracted me to this was that it is not a diet, but a nutritional program that eliminates gluten, processed foods, dairy, and added sugars  to "help jump-start your metabolism while helping you discover which foods are causing bloating, inflammation, intolerance, and stubborn fat loss" (Cassey Ho).

So in the spirit of eating healthier and being more conscious of ingredients, I want to share some recipes for the next few weeks. First up is this delicious Breakfast Bowl! I make this almost every morning. And how cute is the heart shaped bowl made from coconut shell?!


What's great about this recipe is that you can make it in the evening and keep it in the fridge till the morning, or if you have more time, make it fresh for breakfast. My instructions below are for making it in the morning, but if you prefer to prepare this to keep overnight, you basically just add the water, Chia, and oatmeal into a container and keep it in the fridge till the morning - don't forget to stir! You can either eat it cold or heat it up in the microwave! The toppings are added at the end.


While I like peanut butter, any nut butter works as a topping. It really just depends on what you like. Have fun with this...add berries in the summer and apples and cinnamon in the winter! Or if you like tropical flavors, brown some pineapple in a pan and add unsweetened coconut flakes.


Oatmeal & Chia Breakfast Bowl

Ingredients:

  • 1/2 cup quick oats
  • 3/4 cup water or non-dairy milk of your choice
  • 1 tablespoon Chia seeds
  • 1/2 banana cut in slices
  • 1/2 cup blueberries
  • 1 teaspoon Cacao Nibs
  • 1 tablespoon Peanut Butter
Preparation:
  1. Bring water (or milk) to a boil, add oats, and stir for about 1 minute. Remove from heat, pour into a bowl, and add Chia seeds. Stir until seeds are mixed in. Let sit for a few minutes.
  2. Add the remaining ingredients.
  3. Eat and enjoy!
