Clean Food Friday - Veggie Bowls


Happy Friday! It's time for another clean-eating recipe that I often make. I like to meal prep at the beginning of the week by making several portions of vegetables, brown rice, quinoa, and some type of protein. "Meal-Prep" always sounded like such a daunting term and something only the organized moms or fitness connoisseurs took the time to do. But once I got over the actual term, I really found that it saves me so much time through out the week AND helps me save money, while eating healthy. Through out the week I just alternate between what I prepared so that I don't eat the same combinations every day. Since most of my veggies are roasted in the oven, I get this done fairly quickly! 


Two items I always try to incorporate are chickpeas and sweet potatoes. They take on seasonings really well so that I can alternate between different flavor profiles. Also, they are packed with protein, fiber, and Vitamin A & C. I like cooking with colorful ingredients, so here I added kale. If you like to add more protein, you can easily pair this with grilled chicken or fish, for example!


Veggie Bowl

Ingredients:
  • 2 diced Sweet Potatoes
  • 1 can washed, drained, and dried Chickpeas 
  • 2 cups chopped Kale
  • Salt and Pepper to taste
  • 1/4 teaspoon Cayenne 
  • Extra Virgin Olive Oil
Preparation:

1. Pre-heat oven to 400 degrees Fahrenheit.
2. Place chickpeas & sweet potatoes on a foil-lined baking sheet. Drizzle with olive oil.  Season with  salt and pepper. Sprinkle Cayenne over the chickpeas (note: you can use any seasonings you like...Turmeric or Old Bay taste great, too).         
3. Place in oven and set timer for 15 minutes.
4. In the meantime drizzle olive oil on kale and place on another baking sheet.
5. After 15 minutes, place kale in oven, flip the potatoes and chickpeas, and set the timer for another 15 minutes.
6. Divide veggies in several containers to keep in fridge for the week.
***Note: add Brown Rice or Quinoa, as well as chicken or fish for a more well-rounded meal
