Clean Food Friday - Nice Cream Two-Ways
Last, but definitely not least, I finish my Clean Food Friday series with a real treat: 2 guilt-free & delicious Nice Cream recipes!
First up: Very Berry Banana - this one is so refreshing and can be made with fresh or frozen berries. The consistency of the Nice Cream tends to be more like sorbet if you use frozen berries, though. I love playing around with toppings, too. I used little fruit cutters for the banana stars and dragon fruit flowers! The blackberries are starting to be in season right now, so I like to stock up on those. I also sprinkled some coconut flakes for some added tropical flavor!
Bananas are a definite must-have for Nice Cream. I buy them in bulk and freeze them once they turn brown. Note: make sure to peel and slice the bananas before freezing them!
I love stocking up on any seasonal fruit and freezing what I don't use. This way I can enjoy smoothies in the winter time, as well!
I'm also sharing a recipe for Peanut Butter Chocolate Nice Cream that I always make when I have a sweet tooth...which is often!!! Don't get me wrong, this does not taste EXACTLY like chocolate ice cream, but it comes pretty close and does not upset my stomach because it is dairy- and added sugar-free!
Both recipes are either for one large serving or two smaller servings if you want to share this treat with your favorite person :)
Very Berry Banana Nice Cream
Ingredients:
- 1/2 cup Unsweetened Almond or Coconut Milk
- 1 TBSP Plant Based Vanilla Protein (can be substituted with Honey or Agave)
- 1/2 frozen Banana (in slices)
- 1 cup frozen Berries (I used Cherries, Strawberries, and Blueberries)
- For garnish: fresh Banana, Dragon Fruit, Unsweetened Shredded Coconut, Blackberries
Preparation:
- Mix milk and protein (or sweetener of choice) in a blender/bullet.
- Add all fruit and blend until smooth. If the mixture gives you trouble and does not blend well, add a little more milk or water.
- Pour in a bowl and add toppings. Easy-peasy, right?
Peanut Butter Chocolate Nice Cream
Ingredients:
- 1/2 cup Unsweetened Almond or Coconut Milk
- 1 TBSP Plant Based Vanilla or Chocolate Protein (can be substituted with Honey or Agave)
- 1 TBSP Cacao Powder (natural/unsweetened)
- 1 TBSP Creamy Peanut Butter
- 1 frozen Banana (in slices)
- optional: 1/4 ripe Avocado for extra creaminess
- For garnish: fresh Strawberries, Cacao Nibs, Unsweetened Shredded Coconut
Preparation:
- Mix milk, protein powder (or sweetener of choice), cacao powder, and peanut butter in a blender/bullet.
- Add frozen banana and blend until smooth. Again, if the mixture is not blending well, add a little more liquid.
- Pour in a bowl and add toppings.
